Instructor: Anne Marie Katalenas is the founder and beekeeper behind The Giddy Bee, a Lancaster, South Carolina-based business rooted in bees, pollinators, education, and the everyday products and experiences they inspire. A South Carolina Certified Beekeeper and certified Level 1 Honey Sommelier through the American Honey Tasting Society, Anne Marie combines hands-on beekeeping experience with sensory education and storytelling to explore the remarkable diversity of honey and the ecosystems that make it possible.

Honey is much more than something sweet; it is a reflection of the flowers, landscape, season, and honeybees that created it.
In this guided sensory tasting, participants will explore a curated selection of varietal honeys while learning how botanical source and geography influence honey’s color, aroma, texture, and flavor. We’ll discuss the difference between varietal and infused honey, how beekeepers identify and harvest varietal honeys, and why honey produced from different nectar sources can taste dramatically different.
Participants will also learn the basics of how to read a honey label, what common terms really mean, and what to look for when choosing honey. We’ll explore when buying local honey matters, when it may not, and why honey from other regions can be just as meaningful to taste and enjoy.
The tasting process is inspired by professional honey evaluation. We’ll connect each honey back to the plants and ecosystems that make it possible and explore the relationship between pollinators, regional agriculture, and the landscapes around us.

Parking: During the week you must park in our visitor decks. Park in East Deck #1. Parking is free on the weekends - we still recommend parking in East Deck #1. If you park in an open lot through the week you will receive a fine of $85 from the university. We do have very limited free parking spots in front of the Greenhouse, but those fill up quickly.
